Tikka masala

Serves 4

Ingredients

  • 400g chicken breast, cut into cubes (Dar El Fellous)
  • 200 ml plain yogurt
  • 2 tbsp tikka curry paste
  • 1 onion, thinly sliced
  • 400g crushed tomatoes
  • 200 ml coconut milk
  • 250g basmati rice
  • 2 tbsp oil
  • Salt and fresh coriander

Preparation

  1. Mix the yogurt and tikka curry paste. Marinate the chicken pieces in the mixture for 2 hours in the fridge.
  2. Heat the oil in a pan. Sauté the onion, add the marinated chicken, and cook for 10 minutes.
  3. Add the crushed tomatoes and coconut milk. Simmer for 20 minutes.
  4. Cook the basmati rice according to the instructions. Serve the chicken over the rice, garnished with fresh coriander.
